Fried noodles with minced meat

Ingredients

Servings: 4
  • 3 Eggs (size M)
  • 3 TABLESPOONS Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS oil for eggs + 1 tablespoon of oil
  • 1 Onion
  • 2 Garlic cloves
  • 250 g Carrots
  • 150 g Spring onions
  • 1 red chilli pepper
  • 400 g mixed minced meat
  • 250 g Fried noodles (e.g. Mie noodles)
  • 75 ml Soy sauce
  • 150 ml Organic vegetable broth
  • 7-10 Tbsp red chillies

Directions

    Whisk eggs and milk. Season with salt, pepper and nutmeg. Grease a pan (top 24.5 cm Ø, bottom 19 cm Ø) with oil, heat up and add a thin layer of eggs. Let it set, but do not brown.

    Fold over the omelette in the pan once and brush the freed area with oil again. Then let another thin layer of eggs falter. Fold the two omelette layers over each other onto the newly baked half of the omelette.

    Brush the freed surface with oil again and let a thin layer of eggs falter in it again. Repeat this process until the egg mixture is used up. Remove the layered omelette from the pan.

    Peel and chop the onion. Peel and finely chop the garlic. Peel, wash and cut carrots into sticks. Clean, wash and cut spring onions into rings. Wash chilli and cut into rings.

    Heat 1 tablespoon of oil in a frying pan, crumble the minced meat into it and fry vigorously while turning. Meanwhile, prepare the noodles in boiling salted water according to the instructions on the packet. Add the onion, garlic, spring onions, carrots and chilli and fry briefly.

    Season with salt and pepper. Deglaze with soy sauce and stock, bring to the boil, cover and simmer for about 5 minutes. Pour pasta into a sieve, rinse briefly and drain well. Mix the noodles into the minced meat mixture, heat up again and season with salt and pepper.

    Cut the layered egg omelette into strips. Arrange noodles and egg omelette strips garnished with chilli pepper in bowls.
