Noodles in bean and pork filet sauce

Ingredients

Servings: 4
  • 400 g thin fillets of pork
  • 50 g Baby Spinach
  • 2 Onions
  • 1 Garlic clove
  • 1 TEASPOON + 1-2 tablespoons of oil
  • 1 TABLESPOON Tomato paste
  • 100 ml Vegetable broth
  • 2 can(s) (425 ml each) baked beans in tomato sauce
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 300 g Rigatoni pasta

Directions

    Wash the meat, dab dry and cut into slices about 2 cm thick. Clean, wash and drain the spinach. Peel onions and garlic, dice finely. Heat 1 tsp. oil in a pot. Fry the onions and garlic for 1-2 minutes while stirring. Add tomato paste, roast, deglaze with broth and baked beans. Add spinach, except for a few leaves for garnishing. Season to taste with salt and pepper

    Cook the pasta in boiling salted water according to the instructions on the packet. Heat 1-2 tablespoons of oil in a frying pan. Season meat with salt and pepper. Fry on both sides for about 2 minutes. Cook over medium heat for 3-4 minutes. Add meat to the sauce

    Drain the pasta, toss in the sauce and arrange in deep plates or bowls. Garnish with spinach leaves
