  • 1 TABLESPOON Flour
  • 1 TABLESPOON Butter
  • 500 g Pork tenderloin
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Stem(s) Basil
  • 100 g Parmesan (piece)
  • 2 TABLESPOONS Pine nuts
  • 12 discs Parma ham
  • 500 g green asparagus
  • 3 TABLESPOONS Oil
  • 400 g fine ribbon noodles
  • 1⁄8 l dry white wine
  • 150 g Whipped cream
  • 1 TEASPOON Vegetable broth (instant)
  • 1 large freezer bag
  • 7-10 Tbsp wooden skewers
  • baking paper

    Knead flour and butter. Chill. Dab the fillet dry and cut into 4 pieces. Put the medallions one by one in the freezer bag and beat very flat with a saucepan. Place them side by side on the work surface, season with salt and pepper.

    Wash the basil and remove the leaves. Grate the parmesan. Cover one half of each slice of meat with some basil leaves, pine nuts and half parmesan. Fold them over and wrap 3 slices of ham around each one.

    Possibly stuck. Wash the asparagus and cut off the woody ends. Cut the asparagus into diagonal slices.

    Meanwhile, prepare the pasta in plenty of boiling salted water according to the instructions on the packet. Dissolve frying fat in the pan with 1⁄4 l water, wine and cream. Bring to the boil and stir in the stock. Simmer at low heat for about 8 minutes.

    Add the asparagus to the noodles about 3 minutes before the end of the cooking time.

    Boil up the sauce and stir in the flour butter. Simmer for about 3 minutes while stirring. Season to taste with salt and pepper. Drain the pasta and asparagus. Arrange everything, garnish with the rest of the parmesan.
