Ingredients

Servings: 4
  • 1/2 l Wine vinegar
  • 1 TABLESPOON Mustard seeds
  • 1 TEASPOON Coriander seeds
  • 1 TABLESPOON black peppercorns
  • 1 sprig of laurel
  • 1 kg ready-to-cook green herrings (8 pieces)
  • 100 g (about 30 g left) Flour
  • 1 TEASPOON Salt
  • 7-10 Tbsp Juice of 1 lemon
  • 4 TABLESPOONS Oil
  • 3 Onions
  • 2 Gherkins

Directions

    Bring vinegar, 1/2 litre of water and spices to the boil, let it cool down again. Meanwhile wash herrings inside and out and dab dry. Mix flour and salt. Sprinkle herrings with lemon juice, turn in flour and tap off excess flour. Heat the oil. Fry the fish for 3-4 minutes on each side and dab with kitchen paper.

    Peel onions and cut into rings. Cut cucumbers into slices. Layer fried herrings, onions and cucumbers in a form. Pour the cooled stock over them. Cover and leave to stand in a warm place for at least 24 hours
