Pour 500 ml of warm water over wholemeal meal. Leave to soak overnight. Finely dice the apricots. Peel the mango and cut into slices from the core. Peel oranges so that the white skin is completely removed.
Remove the fillets from the parting skins with a sharp knife. Wash the starfruit thoroughly and cut into slices. Wash lemon balm, dab dry and pluck leaves from the stalks.
Cut half of the leaves into strips. Peel and slice the banana. Stir the soured milk until smooth. Arrange fruit, soaked wholemeal, soured milk, apricots and cashew nuts on four plates.
Sprinkle soured milk with maple syrup and sprinkle with strips of lemon balm. Decorate with remaining lemon balm.
