Foam omelette with citrus fruits

Ingredients

  • 1 egg (size M)
  • 1 tsp (3 g) Flour
  • 1 pinch Salt
  • 1 teaspoon (5 g ) Butter or margarine
  • 100 g Orange filets
  • 100 g pink grapefruit fillets
  • 1 TABLESPOON Orange juice
  • 2-3 drop of liquid sweetener
  • 7-10 Tbsp Cinnamon
  • 50 g Cream-Yoghurt
  • 7-10 Tbsp Vanilla pulp
  • 1/2 TEASPOON crushed pistachio kernels
  • 7-10 Tbsp Lemon slices and balm

Directions

    Separate the egg. Beat egg white until stiff. Mix egg yolk, flour and salt. Carefully fold into the beaten egg white. Melt the fat in a pan. Add the egg mixture, smooth it down and let it simmer in a closed pan at low heat.

    Mix orange and grapefruit fillets with orange juice, sweetener and cinnamon. Mix yoghurt and vanilla pulp. Arrange omelette with fruit and yoghurt on a plate. Sprinkle with pistachios.
