Clean the rocket, wash it and shake it dry. Peel the shallots and cut them into halves or quarters depending on size. Wash the meat, dab dry and season with salt
Heat the oil in a frying pan. Fry the fillets for about 4 minutes while turning. Season with pepper. Take out, wrap in aluminium foil and let rest. Sauté the shallots in the frying fat for about 5 minutes. After approx. 2 minutes season with salt and caramelise sugar
Cut the bread in half and slice from the top, but do not cut through. Spread with cheese. Cut meat into slices. Fill breads with salad, meat and shallots. Tie together with kitchen string
