Ingredients

  • 100 g Butter or margarine
  • 75 g Lard
  • 75 g demerara sugar
  • 1 package Bourbon vanilla sugar
  • 1 egg (size M)
  • 4 drops of bitter almond oil
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 TEASPOON Cinnamon
  • 1/2 TEASPOON Cardamom
  • 300 g Spelt flour (health food store)
  • 1 package Tartrate baking powder
  • 2 TABLESPOONS Grümmel candy
  • baking paper

Directions

    Cream fat and lard with the whisk of the hand mixer. Gradually stir in brown sugar and vanilla sugar. Add egg, bitter almond oil, salt, lemon peel, cinnamon and cardamom.

    Mix flour and baking powder, stir 2/3 into the egg-fat mixture. Knead in the rest. Form two rolls (2 cm Ø) and put in a cool place for 1 1/2 hours. Cut into slices about 1/2 cm thick. Place on a baking tray lined with baking paper, sprinkle with crumbs and bake in a preheated oven (electric cooker: 200°C/ gas: level 3) for 12-15 minutes.

    Let it cool down on a cake rack. Makes 55 pieces.
