Cured pork chop on sambalk cabbage

Ingredients

Servings: 4
  • 1 Onion
  • 1 TABLESPOON Oil
  • 1 can(s) (850 ml) Sauerkraut
  • 100 ml apple juice
  • 7-10 Tbsp salt, pepper
  • 1 pinch Sugar
  • 4 Kasseler chops (a approx. 200 g)
  • 4 TABLESPOONS clarified butter
  • 600 g fresh gnocchi (cooling shelf)
  • 4 Stem(s) Parsley
  • 150 g Fresh cream
  • 2 TEASPOONS Sambal Oelek

Directions

    Peel and chop the onion. Heat the oil in a pot. Fry the onion until transparent. Add sauerkraut and fry briefly. Pour on apple juice. Bring to the boil, season with salt, pepper and sugar. Cover and stew for about 20 minutes.

    Wash the meat and dab dry. Heat 2 tablespoons of lard in a pan. Fry the gnocchi for about 8 minutes until golden brown. Heat 2 tbsp. lard in a second large pan. Fry the meat for about 3 minutes on each side.

    Wash parsley, shake dry and chop finely. Stir into the sauerkraut with crème fraîche and sambal oelek. Heat the cabbage and season to taste again. Serve everything.
