Mix veal liver sausage and liqueur. Grind half of the pistachios finely and stir into the liver sausage cream. Fill the mixture into a piping bag with star-shaped spout and squirt onto 12 crackers.
Wash and quarter the cherry tomatoes. Quarter the remaining crackers as well. Decorate the sprinkled crackers with a quarter each of cherry tomatoes and crackers. Wash the lettuce leaves and drain well. Arrange 3 colourful crackers, salad and remaining cherry tomato quarters on plates.
Chop the remaining pistachios and sprinkle over the plates. Serve garnished with the herbs.
