Crostinis with tomato and basil and crostinis with scrambled eggs

Ingredients

Servings: 6
  • 3 small tomatoes
  • 1 Onion
  • 1/2 bunch Basil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Olive oil
  • 1/2 bunch Chives
  • 3 Eggs (size M)
  • 2 tablespoons (approx. 30 g) black olive rings
  • 7-10 Tbsp pink berries
  • 2 Garlic cloves
  • 10 g Butter
  • 12 Baguette slices (approx. 13 g each)

Directions

    Clean, wash and dice the tomatoes. Peel and finely chop the onion. Wash and chop basil. Mix the prepared ingredients. Season with salt, pepper and 1 teaspoon of olive oil.

    Wash the chives and cut into small rolls. Beat the eggs, chives and olive rings. Season with salt and crushed pink berries. Let the eggs fry in the hot fat for 2-3 minutes, pushing them together carefully.

    Peel the garlic and press it through a garlic press. Fry in the remaining hot oil until golden. Fry the baguette slices briefly on each side. Cover one half with tomatoes, the rest with scrambled eggs and serve.
