Heat sugar, 100 g grated coconut and egg white in a pot to approx. 50°C while stirring constantly. Remove the pot from the stove. Stir in lemon zest and remaining grated coconut. Spread the wafers on a damp baking tray and use 2 teaspoons of a little coconut mass as a heap on the wafers. Bake in a preheated oven (electric: 175 °C/ gas: level 2) for about 20 minutes. Results in about 40 pieces
