Put the flour and vanilla pulp in a bowl. Beat the eggs and add to the flour while stirring, mix well. Stir in syrup and sugar, add grated coconut. Line 2 baking trays with baking paper. Cut off the coconut mixture by the spoonful, form small mountains with your hands, place on the baking trays. Bake the lime and coconut burgers one after the other in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 12-15 minutes until golden brown.
Let them cool down. Mix icing sugar with the schnapps to a smooth glaze. Sprinkle the tops of the coconut mountains with the icing, sprinkle with lime zest. Leave to dry. Store in a cool and dry place
