Cut the skin off the pineapple slices and remove the woody centre. Quarter the pineapple slices. Peel the orange and grapefruit so that the white skin is completely removed. Cut the orange into slices. Remove grapefruit fillets from the parting skins with a sharp knife.
Peel and slice the banana. Mix honey and liqueur and let the fruits marinate in it for about 30 minutes. Arrange citrus salad on dessert plates. Mix crème fraîche and vanilla sugar and spread a blob on each citrus salad. Sprinkle with brittle and serve decorated with lemon balm as desired
