Mix mayonnaise with curry. Clean, peel and quarter the pineapple, cut out the stalk. Cut pineapple into slices. Wash the flesh, dab dry, halve lengthwise once each. Fry bacon in a hot pan until crispy, drain on kitchen roll.
Grill the meat on the hot grill while turning for about 6 minutes. Grill the pineapple for 1-2 minutes on each side as well. Briefly warm the bread on the hot grill and spread with the mayonnaise. Cover with 1 1/2 slices of bacon and 1/2 chicken filet. Sprinkle with fried onions and garnish with thyme.
