Ingredients

Servings: 7
  • 300 g fine ribbon noodles
  • 7-10 Tbsp Salt
  • 8 TABLESPOONS Oil
  • 1 Cantaloup melon
  • 1/2 Galia melon
  • 100 g Rocket
  • 60 g Pine nuts
  • 6-8 TABLESPOONS Vinegar
  • 1/2 TEASPOON Honey
  • 1/2 TEASPOON Mustard
  • 7-10 Tbsp Pepper

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet, drain and sprinkle with 2 tablespoons of oil. Seed the melons. Cut out balls from the flesh. Clean, wash and chop the rocket a little smaller. Roast pine nuts in a pan without fat until golden brown.

    Mix the prepared ingredients. For the marinade, mix 6 tablespoons of vinegar, honey and mustard, then fold in the oil. Season to taste with salt, pepper and 1-2 tablespoons of vinegar. Fold the vinaigrette into the salad
