Wash the potatoes and dab dry. Cut a thin lid off each. Coat the baking tray with oil and sprinkle with coarse salt. Place the potatoes on top with the cut edge facing down. Cook in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 40 minutes.
In the meantime cut cheese into slices. Turn the potatoes and cover with cheese. Sprinkle Racelette cheese with chopped rosemary. Bake again for about 10 minutes. Serve garnished with fresh herbs
