Peel, wash and slice the potatoes. Put them into a large bowl and mix well with oil, salt, pepper and the spice mixture. Place on a baking tray lined with baking paper. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 45-55 minutes until crispy, turning once after about half the baking time. Grate cheese finely and sprinkle over the top 5 minutes before the end of the cooking time. Take out and serve in bags
