Wash the mint, dab dry and remove the leaves. Halve the whole melon. Remove melon seeds. Cut melon halves into 8 slices. Cut honeydew melon slices from the skin and quarter them.
Remove the cantaloupe slices from the skin and cut in half. Alternate melon pieces and Parma ham with mint leaves on wooden skewers. Pour balsamic cream over the skewers.
