Ingredients

  • 250 g Flour
  • 1/2 TEASPOON Salt
  • 1 pinch Sugar
  • 1 coated Tsp Baking Powder
  • 50 g Hard cheese (e.g. Parmesan; in pieces)
  • 1 egg (size M)
  • 125 g cold butter or margarine
  • 50 g Gouda cheese
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Whipped cream (alternatively milk)
  • 1 TABLESPOON Caraway seeds
  • 1 TABLESPOON freeze-dried parsley
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Grate hard cheese. Mix flour, salt, sugar, baking powder and hard cheese in a mixing bowl. Add egg and fat in flakes. Knead first with the dough hooks of the hand mixer, then briefly with your hands until smooth. Cover and chill for about 40 minutes. Roll out the dough on a lightly floured work surface to a thickness of 3 mm. Cut out approx. 45 cookies with cookie cutters (wine motifs, bottle cutters).

    Place on two baking trays lined with baking paper. Grate Gouda. Mix egg yolk and cream. Spread the biscuits with it. Sprinkle with caraway, parsley and cheese. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 10-12 minutes. Remove from the oven, place on a rack and allow to cool
