Büffelmozzarella mit Tomatenragout & Serranoschinken

Ingredients

Servings: 4
  • 2 Shallots
  • 1 Garlic clove
  • 400 g ripe vine tomatoes
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Tequila or white wine
  • 200 g Buffalo mozzarella
  • 100 g Serrano ham

Directions

    Peel the shallots and garlic. Cut shallots into small cubes and garlic into thin slices. Wash the tomatoes and cut them into slices.

    Heat the oil in a frying pan. Sauté the shallots and garlic until translucent. Add tomatoes and steam for about 5 minutes. Season to taste with salt, pepper and sugar. Deglaze with tequila. Take the pan off the stove.

    Pluck cheese and ham into small pieces. Fold the cheese under the tomatoes and arrange everything. Sprinkle ham over it. Crispy toasted bread tastes good with it.
