Boiled potatoes with sausage salad

Ingredients

Servings: 4
  • 600 g baby potatoes
  • 1 TEASPOON Caraway seeds
  • 1 Onion
  • 4 TABLESPOONS Herb Vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Oil
  • 200 g small tomatoes
  • 175 g Turkey or poultry sausage
  • 4 beautiful leaves lettuce
  • 1/2 bunch Chives
  • 175 g Paprika Quark

Directions

    Wash the potatoes and cook in plenty of boiling water together with the caraway seeds for about 20 minutes. In the meantime peel and finely dice the onion. Mix vinegar, diced onion, some salt and pepper.

    Embezzle oil at the end. Wash the tomatoes, dab dry and cut into slices. Cut sausage into strips and mix with tomatoes and vinaigrette. Wash and drain the lettuce.

    Wash the chives, dab dry and cut into fine rolls. Pour the potatoes onto a sieve, rinse briefly in cold water and remove the skin. Distribute the salad leaves on 4 plates and arrange the sausage salad on top.

    Add hot potatoes in the skin, add paprika quark and serve sprinkled with chives. If necessary, sprinkle the jacket potatoes again with a little caraway.
