Ingredients

  • 1/2 TEASPOON Olive oil
  • 40 g mixed minced meat
  • 30 g sliced mushrooms
  • 20 g yellow and red pepper cubes
  • 1 knife tip minced garlic
  • 130 g Diced tomatoes (tin)
  • 1 TABLESPOON apple juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 40 g small broccoli florets
  • 30 g small cauliflower florets
  • 10 g frozen peas
  • 1/4 TEASPOON chopped thyme
  • 7-10 Tbsp Thyme

Directions

    Heat olive oil in a frying pan. Sauté the minced meat, mushrooms, peppers and garlic, then add the diced tomatoes and apple juice. Simmer for 3-4 minutes and season with salt and pepper.

    Meanwhile, cook broccoli, cauliflower and peas in boiling salted water for 2-3 minutes. Add the vegetables and thyme to the mince and serve. Garnish with thyme.
