Heat olive oil in a frying pan. Sauté the minced meat, mushrooms, peppers and garlic, then add the diced tomatoes and apple juice. Simmer for 3-4 minutes and season with salt and pepper.
Meanwhile, cook broccoli, cauliflower and peas in boiling salted water for 2-3 minutes. Add the vegetables and thyme to the mince and serve. Garnish with thyme.
