Soak skewers in cold water for about 1 hour. Mix yoghurt and quark. Clean, wash and finely dice the cucumber. Peel garlic and chop finely. Stir in both. Season with salt and pepper and chill
Onions peel, finely dice. Knead with minced meat, tomato paste, breadcrumbs, spice ingredients and eggs. Form 20-24 longish loaves around the skewers
Fry in hot oil for 4-5 minutes on each side. Garnish skewers if necessary. Add the tzatziki. Taste warm and cold
