Carefully wash and sort blueberries. Wash the currants and remove from the panicles. Drain the berries. Add lemon juice and honey to the berries in a bowl and mix. Leave to stand for a while. Beat the egg whites until stiff, while pouring in the icing sugar.
Place the berries in 4 ovenproof dishes. Pour egg-snow mixture over them. Slide under the preheated grill and let the meringue brown. Remove and decorate with lemon balm as desired. Serve immediately
