Iced melon halves with berries

Ingredients

Servings: 4
  • 2 Orange melons (approx. 800 g each)
  • 375 g Strawberries
  • 375 g Blueberries
  • 1/2 l Apricot juice
  • 7-10 Tbsp juice of 1/2 lemon
  • 2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Crushed Ice

Directions

    Cut the melons in waves and halve them. Scrape out the seeds with a spoon. Cut out the flesh in pieces up to an approx. 1 cm wide edge. Wash the strawberries, except for some for garnishing, clean and halve. Sort and wash blueberries. Mix apricot, lemon juice and icing sugar.

    Mix prepared berries and melon interior, fill into the halves. Pour 2/3 of the juice mixture over it. Leave the halves to freeze in the freezer for about 1 hour. Then possibly arrange on the crushed ice. Spread the rest of the juice over it and serve garnished with the remaining strawberries
