Peel and chop onion and garlic. Fry in 2 tablespoons of hot oil. Add tomato paste and tomatoes. Season with oregano, salt, pepper and sugar. Boil down for about 4 minutes while stirring
Clean, wash and slice the aubergines. Sprinkle with salt and leave to stand briefly. Heat the rest of the oil. Fry the aubergines on each side. Drain on kitchen paper. Place in 4-6 ovenproof dishes or 1 large dish
Spread the sauce on it. Put cheese in slices on top. Bake in a hot oven (electric cooker: 200 °C / convection oven: 175 °C / gas: level 3)for 15-20 minutes
