Wash and clean the aubergines and cut them lengthwise into 12 slices. Lightly salt the slices on each side and let them stand for about 15 minutes. Dab off any escaped liquid. Heat 2 tablespoons of oil in a large frying pan. Lightly fry 1/4 of the aubergine slices on each side.
Fry the remaining aubergine slices in 2 tablespoons of oil. Take out and drain on kitchen paper. Wash the sage, shake dry and cut the leaves into fine strips, except for some garnish. Cut the ham slices in half. Cover aubergines with ham and Emmental cheese. Season with sage. Roll up and place in a greased casserole dish. Sprinkle with parmesan. Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for approx. 10 minutes.
