Asparagus sauce: Hollandaise sauce

Ingredients

Servings: 4
  • 200 g Butter
  • 2 Egg yolk (size M)
  • 125 ml dry white wine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Lemon juice

Directions

    Cut butter into pieces and melt in a pot. Beat the egg yolks and white wine over a hot water bath until thick and frothy. Beat butter slowly. Season sauce with salt, pepper and possibly some lemon juice.
