1/2 small onion
4 TABLESPOONS White wine vinegar
1/2 TEASPOON medium hot mustard
1 pinch Salt
7-10 Tbsp Pepper
1 pinch Sugar
6 TABLESPOONS Oil

Finely chop the onion. Mix vinegar, mustard, salt, pepper, sugar and onion with a whisk until sugar and salt have dissolved.

Add the oil drop by drop and leave to stand for 10 minutes. Mix vinaigrette with salad or serve with salad.
