Wash and halve the apricots, remove stones and roughly dice the flesh. Halve the passion fruit and scrape out the pulp. Cut open vanilla pod and scrape out pulp. Mix apricots, sugar and vanilla pulp with a hand blender for about 45 seconds.
Stir in the passion fruit pulp. Pour the fruit spread into a clean glass and store in the refrigerator. Consume within 14 days.
