Roast the oat flakes in a pan without fat, take them out and let them cool down. Meanwhile cut the vanilla pod lengthwise and scrape out the pulp. Mix yoghurt and vanilla pulp. Season to taste with a few dashes of sweetener.
Cut the apricots into slices. Fill oat flakes into a bowl. Put yoghurt and apricot slices on top. Sprinkle with pistachios and possibly decorate with lemon balm
