Apple-Almond Wafers

Ingredients

Servings: 12
  • 6 sour apples
  • 300 g Butter or margarine
  • 200 g Sugar
  • 1 TEASPOON + some cinnamon
  • 100 g Almond slivers
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 6 Eggs (size M)
  • 500 g Flour
  • 1 package Baking Powder
  • 300 ml Milk
  • 250 g Whipped cream
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Grease

Directions

    Washing apples. Put 1 apple halves aside. Peel the rest, quarter, core and cut into small cubes. Heat 50 g fat in a pot. Steam apples, 20 g sugar and cinnamon until soft. Let it cool down.

    Melt 80 g sugar in a pan and let it caramelize. Add almonds and mix. Remove from the pan and let it cool down. Cream 250 g soft fat with 100 g sugar, 1 packet vanilla sugar and salt. Stir in the eggs one by one. Mix flour and baking powder and stir into the dough alternating with the milk. Stir 1/3 of the apple compote and almonds (except for a few for decoration) into the dough. Preheat the waffle iron, lightly grease it. Bake 12 waffles one after the other. Whip the cream until semi-stiff. Cut the apple half into thin slices.

    Mix flour and baking powder and stir into the dough alternating with the milk. Stir 1/3 of the apple compote and almonds (except for a few for decoration) into the dough. Preheat the waffle iron, lightly grease it. Bake 12 waffles one after the other. Whip the cream until semi-stiff. Cut the apple half into thin slices. Serve the waffles with the rest of the apple compote and cream sprinkled with cinnamon. Decorate with apple slices, almonds and mint leaves
