Warm up the milk. Whip cream until stiff, chill. Mix milk and cream powder with the whisks of the hand mixer first at low speed, then beat at highest speed for about 1 minute. Stir the cream into the cream. Rinse 4 moulds (approx. 150 ml content) with cold water and pour in the cream. Chill for approx. 3 hours
Fresh berries are washed or sorted and cleaned. Mix 4-5 tablespoons of juice, sugar, vanillin sugar and sauce powder. Bring the rest of the juice to the boil, stir in the sauce powder, bring to the boil and fold in the berries (frozen, unfrozen). Leave to cool
Remove the almond flan from the moulds. Arrange on plates with the berries. Decorate as desired with lemon balm
