Yeast apple cake with sour cream

Ingredients

  • 1/4 l Milk
  • 1 cube (42 g) fresh yeast
  • 225 g Sugar
  • 500 g Flour
  • 1 pinch Salt
  • 2 Eggs (size M)
  • 7-10 Tbsp grated peel and juice of 1 untreated lemon
  • 125 g Butter or margarine
  • 7-10 Tbsp 1.5 kg medium size, sour apples
  • 125 g Schmand
  • 100 g Hazelnut flakes
  • 1 TABLESPOON Raisins
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Flour

Directions

    Warm the milk slightly. Stir yeast and 1/2 teaspoon sugar into 1/2 cup of milk until smooth. Cover and leave to rise in a warm place. Put flour, 100 g sugar, salt, 1 egg and lemon zest in a mixing bowl. Melt 100 g fat in remaining milk. Stir yeast milk into the flour.

    Mix the warm milk and fat mixture with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 30 minutes. In the meantime, wash the apples, quarter them and remove the core. Cut the apples into pieces. Bring lemon juice, 125 ml water and 50 g sugar to the boil in a wide saucepan. Add apple pieces and stew covered for 6-8 minutes. Mix the sour cream, 50 g sugar and the remaining egg. Drain the apple pieces on a sieve and let them cool down a bit. Knead the dough again, halve the amount. Roll out one half on the greased fat pan of the oven. Spread apples on top.

Use a tablespoon to press depressions into the yeast dough and place shampoos into them. Sprinkle with hazelnut leaves, raisins and remaining sugar. Spread the rest of the fat in flakes on top. Bake in the preheated oven (electric cooker: 200°C/ gas: level 3) for about 30 minutes. Results in approx. 30 pieces

    Roll out the rest of the yeast dough on a floured work surface to the size of the fat pan and place it over the apples. Use a tablespoon to press depressions into the yeast dough and place shampoos into them. Sprinkle with hazelnut leaves, raisins and remaining sugar. Spread the rest of the fat in flakes on top. Bake in the preheated oven (electric cooker: 200°C/ gas: level 3) for about 30 minutes. Results in approx. 30 pieces
