Wash apples, quarter them, remove seeds and, except for 1 quarter, peel and cut into small pieces. Cut the unpeeled quarter into thin slices. Steam apple pieces and slices in 100 ml water and lemon juice for about 3 minutes.
Drain the apple pieces and slices. Mix milk and cream powder with the whisk of the hand mixer and beat at highest speed for approx. 3 minutes until creamy. Fold the apple pieces into the vanilla cream, fill into dessert glasses and refrigerate.
Serve decorated with apple wedges and brittle.
