Wholemeal bread with avocado cream and cucumber

Ingredients

Servings: 4
  • 2 Avocados
  • 4 Vine tomatoes
  • 7-10 Tbsp Juice of 1 lemon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 Mini cucumbers
  • 8 discs Wholemeal bread
  • 7-10 Tbsp Rungs

Directions

    Cut avocados in half lengthwise, open, remove seeds and peel. Finely dice half of the flesh, blend the rest of the avocado with a hand blender. Wash and quarter the tomatoes, remove the seeds.

    Finely dice quarters. Mix the avocado and tomato cubes with the avocado cream, season to taste with lemon juice, salt and pepper.

    Wash the cucumbers and slice lengthwise into fine slices. Toast the bread, spread with the avocado spread and cover with cucumber slices crosswise. Add the rest of the avocado spread. Sprinkle with salt and pepper.

    Garnish with sprouts.
