Clean and wash the white cabbage and cut or slice into fine strips. With approx. 1 go. tsp. salt and knead well
Finely dice the bacon and fry until crispy in 1 tbsp. hot oil. Deglaze with apple juice and vinegar and simmer for about 2 minutes. Season with pepper
Stir in tbsp. oil and mustard. Pour over the cabbage, let it cool down a little. Stomp well. Leave to stand for at least 4 hours (preferably overnight). Season salad again
