Mozzarella sticks with melted tomatoes and Mojo Verde

Ingredients

  • 2 Mozzarella cheese (200 g each)
  • 1 collar Parsley
  • 1 collar Coriander
  • 2 Garlic cloves
  • 5 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 300 g Tomatoes
  • 1 TABLESPOON + 100 ml sunflower oil
  • 2 Eggs (size M)
  • 2 TABLESPOONS Flour
  • 8 TABLESPOONS Breadcrumbs

Directions

    Cut the cheese lengthwise into six. Freeze the sticks with some distance between them for at least 1 hour.

    For the Mojo verde herbs wash, shake dry, pluck leaves from the stems and chop finely. Peel garlic and cut into fine cubes. Mix herbs, garlic and olive oil. Season to taste with salt and pepper.

    Peel and halve the onion and cut into strips. Wash, clean and roughly dice the tomatoes. Heat 1 tablespoon of sunflower oil and sauté the onion and tomatoes for about 4 minutes. Season with salt and pepper.

    Whisk eggs in a deep plate and season with salt and pepper. Turn frozen mozzarella sticks one after the other first in flour, egg and breadcrumbs. Heat 100 ml sunflower oil in a large frying pan and quickly deep-fry the sticks in 2 portions while turning them.
