Wash the potatoes thoroughly and cook in water for about 15 minutes. Wash the sage and pluck the leaves from the stems. Drain the potatoes, rinse and cool slightly. Cut the potatoes into quarters.
Heat the oil in a large frying pan. Fry the potatoes in it for about 10 minutes while turning them several times until crispy. Add sage shortly before the end of the frying time. Season the potatoes with salt and pepper and arrange them on a plate.
