Clean and wash the celery and cut into slices. Clean and wash the lamb's lettuce and drain well. Wash and drain the sprouts as well. Peel the pineapple, cut it in half lengthwise and cut out the hard central stalk.
Cut the pineapple into thin slices. Mix the salad ingredients with the turkey cold cuts and arrange in a bowl. Mix yoghurt, honey and lemon juice, pour over the salad and serve immediately.
