Clean the salads, quarter them and cut them into fine strips. Wash and drain the salads. Peel the vegetable onion and cut into fine strips. For the vinaigrette, peel the garlic and press it through a garlic press. Mix vinegar, lemon juice, salt, pepper, sugar and garlic. Whip the oil into the vinaigrette.
