Apple and sprout salad

Ingredients

Servings: 4
  • 1 Fennel tuber (approx. 250 g)
  • 1 (approx. 100 g) Carrot
  • 2 Apples
  • 50 g Radish sprouts
  • 50 g Lamb's lettuce
  • 1 Onion
  • 4 TABLESPOONS Cider vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Walnut oil
  • 40 g ComtĂ© cheese

Directions

    Clean, wash and slice the fennel finely. Peel and wash the carrot and slice into fine slices. Wash and dry apples, cut in half and cut 4 thin slices from the middle. Cut apples into quarters, remove seeds and slice into thin sticks. Rinse sprouts and let them drip off. Clean and wash the salad. Peel and finely chop the onion.

    Mix vinegar, salt and pepper. Whip oil into it. Mix all salad ingredients with the vinaigrette. Flavour again. Arrange the salad on plates or a platter. Finely slice the cheese and pour over the salad. Garnish with apple slices
