Ingredients

  • 500 g Potatoes
  • 250 g Carrots
  • 250 g Leeks (leek)
  • 2 (approx. 300 g) Apples
  • 4 discs (approx. 400 g) boneless pork
  • 2 tablespoons (10 g each) Oil
  • 1/4 l Vegetable broth (instant)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 collar Chives
  • 150 g ripened cream

Directions

    Peel and wash the potatoes and carrots. Clean and wash the leek. Cut potatoes into narrow slices, carrots diagonally into slices and leek into half rings. Wash apples, quarter them, remove seeds and cut into narrow slices. Wash the smoked pork loin and dab dry. Heat oil in a large pan.

    Fry the smoked pork on each side for about 2 minutes. Take them out. Fry the potatoes in the frying fat for about 5 minutes on all sides. Add carrots and leek and sauté. Deglaze with stock and steam for about 8 minutes. If necessary season with salt and pepper. Add apple slices and braise for another 3 minutes. Put the meat into the pan and heat it up. Wash the chives, dab dry and cut into small rolls. Mix chives and sour cream. Season with salt and pepper.
