Pour the plums into a sieve, drain and collect the juice. Boil up the juice, spice bag, cinnamon stick, star anise, 30 g sugar and lemon juice. Leave to stand for about 10 minutes. Remove spices (put cinnamon stick and star anise aside for decoration).
Stir starch with a little water until smooth. Bring the juice to the boil again, stir in the starch, bring to the boil again. Stir in plums and let cool down. Stir fat and 100 g sugar until creamy. Stir in the eggs one by one.
Mix flour, baking powder and sauce powder and stir in alternately with the sour cream. Heat the waffle iron and spread with oil. Bake about 10 waffles one after the other. Cut the waffles into triangles. Arrange the punch plums in a sauce boat, decorate with cinnamon stick and star anise.
Pass them to the waffles.
