Ingredients

  • 2 Limes
  • 1/2 Vanilla pod
  • 75 ml apple juice
  • 250 g Honey
  • 250 g Sugar
  • 1 kg Quinces

Directions

    Wash the limes thoroughly and rub dry. Cut 1 lime in half, squeeze the juice, cut another lime into slices and put them together in a large bowl. Cut the vanilla pod lengthwise, scrape out the pulp, quarter the pod lengthwise. Bring apple juice, 350 ml water, honey, sugar, vanilla pod and pulp to the boil in a pot

    In the meantime, wash, peel and quarter the quinces and remove the core. Cut the quinces lengthwise into slices, add to the limes and mix. Add to the stock, cook for about 10 minutes, remove from heat

    Remove quince slices from the stock with a skimmer, reduce the stock for another 5 minutes. Divide the quince slices into 4 clean preserving jars (each containing approx. 300 ml), adding a piece of vanilla pod and lime each time. Fill the brew hot into the jars until the quinces are covered, close with preserving rings and lids
