Häckerle with fried potatoes and cucumber salad

Ingredients

Servings: 4
  • 8 herring fillets (approx. 75 g each)
  • 1 (approx. 175 g) Apples
  • 100 g Gherkins
  • 3 Onions
  • 2 TABLESPOONS Lemon juice
  • 7 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 800 g waxy potatoes
  • 1 (approx. 350 g) Cucumber
  • 3 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Sugar
  • 50 g streaky smoked bacon
  • 3-4 Stem(s) Dill

Directions

    Cut off the tail fin from the matie filets if necessary. Dice the fillets finely. Wash the apple, dab dry, quarter and cut out the core. Finely dice the flesh. Dice gherkins.

    Peel onions, dice 1 1/2 finely. Put onion cubes, matie filets, gherkin and apple cubes in a bowl, drizzle with lemon juice and 2 tbsp. oil, mix everything. Season with salt and pepper and put aside.

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Peel and clean the cucumber and cut or slice it very thinly. Season vinegar with salt, pepper and sugar. Fold in 3 tbsp. oil, mix with the cucumber and put aside.

    Rinse the potatoes under cold water, drain them and remove the skin. Cut the potatoes into slices. Heat 2 tablespoons of oil in a frying pan. Fry the potatoes for about 15 minutes while turning.

    Cut bacon into strips, the remaining 1 1/2 onions into rings. After about 10 minutes add bacon and diced onion to the fried potatoes, season with salt and pepper. Wash dill, tro

    Stir the dill into the cucumber salad. Season the Häckerle again, arrange everything, garnish Häckerle with dill flags.
