Beat the curd and vanilla pulp with the whisk of the hand mixer until airy. Stir in mineral water and season to taste with sweetener. For the fruit salad, peel and slice the kiwis.
Wash the grapes, pluck them from the panicles and cut them in half. Wash apples, quarter them, remove seeds and cut into slices. Peel mango, cut flesh into slices from the stone, dice a part. Peel banana and cut diagonally into large pieces.
Put fruit in a bowl and mix with lemon juice and orange juice. Add a dash of sweetener. Serve fruit salad and some vanilla curd on plates. Serve decorated with mint and apple slice.
