Coal stew with Kasseler and carrots

Ingredients

Servings: 4
  • 400 g lean, released Kasseler (weighed boneless)
  • 1 Onion
  • 5 black peppercorns
  • 2 Cloves
  • 500 g Cauliflower
  • 500 g Broccoli
  • 300 g Carrots
  • 1/2 bunch Parsley
  • 7-10 Tbsp Salt
  • 1-2 TEASPOONS clear broth (instant)

Directions

    Wash the cured pork, dab dry and cut into cubes. Peel and slice the onion. Crush peppercorns. Boil up onion, peppercorns, cloves and 2 litres of water.

    In the meantime, clean and wash the cauliflower and broccoli and cut them into florets. Wash and peel the carrots and, except for 2 small carrots for garnishing, cut them diagonally into slices. Put the smoked pork loin, cauliflower and the two carrots into the boiling water and simmer for about 10 minutes.

    Add the broccoli and carrot slices and continue cooking for 5-8 minutes. Wash parsley, dab dry and chop finely. Season the stew with salt and possibly some broth. Remove the whole carrots from the stew and place on top to garnish.

    Serve sprinkled with parsley.
