Bring milk and sweetener to the boil, sprinkle in semolina, bring to the boil briefly and allow to swell over a mild heat for about 10 minutes. Beat egg white until very stiff. Stir into the semolina and heat for 1/2 minute while stirring. For the fruit salad, wash, halve and stone the apricots. Cut the apricot into slices. Peel and slice the kiwi.
Sort raspberries. Wash the cherries, dab dry and stone them. Mix fruit with vanilla sugar and let it stand for about 30 minutes. Arrange semolina and fruit salad in a glass bowl. Decorate with lemon balm if desired.
